This is a very lean cut of bison meat. Lean organic buffalo meat is good for you and considered by most to be more flavorful than beef, but If you prepare these steaks on a grill I would suggest using a marinade to prevent drying it out. Perhaps you have your own buffalo meat recipe, if not we would be glad to help you out. Sirloin is also great for fondue which is one of my favorites.
